LEAN & GREEN CHEESE CAULIFLOWER CRUST PIZZA

INGREDIENTS

  • 5 cup Frozen Riced Cauliflower
  • 3 large Eggs
  • 3/4 tsp Salt (optional)*
  • 1 cup Cherry Tomatoes halved
  • 1/2 tsp Salt (optional)*
  • 1 1/2 cup Fresh Basil finely chopped
  • 3 cup Reduced-Fat Mozzarella Cheese shredded

LEAN & GREEN CHEESE CAULIFLOWER CRUST PIZZA

INSTRUCTIONS

  1. Preheat oven to 425*F.
  2. Spread the cauliflower over a baking sheet lined with parchment paper and bake for 30 minutes, or until golden brown. Allow cooling before removing it from the oven.
  3. Squeeze the cauliflower in a clean kitchen towel to remove any extra moisture. Combine the cauliflower with the eggs and salt (if desired).
  4. Spread the cauliflower batter evenly over a parchment-lined sheet pan and press into a 12-inch round. Bake for 8 minutes at 400°F.
  5. When the crust is done, set it aside to cool while you prepare the toppings. In a small bowl, gently toss cherry tomatoes with salt (optional) and basil.
  6. Remove the sheet pan from the oven, spread out the finished toppings, and set aside to cool. Then, after 10 to 12 minutes at 400°F, sprinkle the desired amount of mozzarella cheese on top of the ingredients and bake until golden brown.
  7. Cut the pizza into 8 equally-sized pieces (2 slices per serving).
