LEAN & GREEN BROWN & WHITE MUSHROOM SOUP
INGREDIENTS
- 1/2 cup Celery
- 1 cup Brown Mushrooms
- 1 cup White Mushrooms
- 1 cup Scallions
- 3/4 cup Onion
- 2 tbsp Butter
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 6 cup Low Sodium Chicken Broth
- 1 tsp Fresh Thyme
- 1 stalk Green Onions (optional)*

INSTRUCTIONS
- In a saucepan over medium heat, melt the butter.
- Add the celery and onions to the stockpot. Stir well until tender but not browned, about 10 minutes.
- Stir in the thyme and mushrooms, and cook until the mushrooms are soft, about 5 minutes more.
- Season the chicken broth with salt and pepper before adding it to the cooker. Cover, and cook for 30 minutes over low heat.
- Ladle into a bowl, and serve with green onions, sprinkle on the top.
