Buffalo Chicken Wrap

Ingredients

  • 3 oz. cooked chicken breast, rotisserie, or canned (in water; drained)
  • 2 tbsp diced celery
  • 2 tbsp diced carrots
  • 2 tbsp chopped red or green onion
  • 2 tbsp reduced-fat mayonnaise
  • 2 tbsp Frank’s hot sauce or buffalo sauce
  • 1 tbsp blue cheese crumbles
  • 2 large lettuce leaves, like butter or green leaf lettuce
  • 1 medium-sized whole wheat, spinach, or sun-dried tomato wrap (or tortilla)
  • ¾ cup fresh berries

Directions

  1. Shred or dice the chicken.
  2. Transfer chicken to a bowl with the celery, carrots, and onion; mix to combine.
  3. Stir in the mayo, hot (or buffalo) sauce and blue cheese crumbles.
  4. Place the lettuce leaves in the center of the wrap.
  5. Spoon the buffalo chicken into the lettuce leaves.
  6. Wrap tightly, like a burrito, and enjoy with a side of fresh berries.

Tips

  • Strawberries, blueberries, blackberries, or raspberries are all great options. If berries are not in season, substitute a small piece of seasonal fruit, such as an apple, pear, or orange.
  • To save time, use a mini food chopper to chop your veggies.
