Lettuce Burger & Sweet Potato Fries

Ingredients

  • 1 medium sweet potato
  • 2 tsp olive oil
  • ½ tsp each: salt & ground black pepper, divided
  • ½ lb. lean ground beef, chicken, or turkey
  • Cooking spray
  • 4 large lettuce leaves, like red or green leaf, butter, or romaine
  • 4 slices each: tomato & red onion
  • 1 ½ cups strawberries

Directions

  1. Preheat oven to 425º F and line a baking sheet with parchment paper.
  2. Cut sweet potato into fry-shaped pieces about ¼ inch to ½ inch thick, trying to cut them into similarly sized pieces so they bake evenly.
  3. Toss potato pieces with olive oil, ¼ teaspoon of salt, and ¼ teaspoon of pepper and place on baking sheet, making sure the potato pieces are not overcrowded to allow them to get crisp.
  4. Bake for 15 minutes, flipping half way through, or until the fries are tender and slightly browned.
  5. While the fries bake, season the ground meat with ¼ teaspoon of both salt and pepper, using your hands to gently mix the seasoning throughout the ground meat.
  6. Divide the meat in half and form into evenly shaped burger patties, about a ½ inch to 1 inch thick.
  7. Heat a nonstick skillet over medium-high heat and lightly grease with cooking spray.
  8. Add patties to skillet, cover, and cook for about 4 to 5 minutes per side.
  9. Place each burger on two lettuce leaves and top with two slices of both tomato and onion; repeat with remaining burger.
  10. Serve burgers with sweet potato fries, seasonal fruit (such as strawberries).

Tip

Add more flavor to the sweet potato fries by seasoning with a pinch of cinnamon and nutmeg.
