LEAN & GREEN ASPARAGUS & CRAB MEAT FRITTATA

  • 2 1/2 tbsp Extra Virgin Olive Oil
  • 2 lbs Asparagus
  • 1 tsp Salt (optional)*
  • 1/2 tsp Black Pepper
  • 2 tsp Sweet Paprika
  • 1 lbs Crabmeat
  • 1 tbsp Fresh Chives finely chopped
  • 1/4 cup Basil
  • 4 cup Liquid Egg Substitute

LEAN & GREEN ASPARAGUS & CRAB MEAT FRITTATA

Instructions

  1. Preheat oven to 375*F.
  2. After washing the asparagus, remove the tough ends and cut them into bite-size pieces. Season with salt (if desired), pepper, and paprika.
  3. In a 12-inch to 14-inch oven-proof, nonstick skillet, warm the olive oil and gently sauté the asparagus for 8 to 10 minutes.
  4. In a mixing bowl, combine the chives, basil, and crab meat as they steam. When the liquid egg substitute has been thoroughly mixed in, add it to the mix.
  5. Break the eggs into a mixing bowl. Pour the crab and the blended mixture back into the skillet with the cooked asparagus and gently stir to combine. Over low to medium heat, simmer until the eggs begin to bubble.
  6. Pour the eggs into a skillet and place them back in the oven for about 15 to 20 minutes, or until they are fully cooked and golden brown. Serve immediately.
