INGREDIENTS
- 2 lbs Boneless Skinless Chicken Breast sliced
- 3 cup Broccoli chopped
- 11/2 cup Red Bell Peppers chopped
- 11/2 cup Yellow Bell Pepper chopped
- 1/2 cup Light Lime Vinaigrette Dressing
- 2 tsp Onion Powder
- 1 tsp Garlic and Herb Seasoning Blend
- 1/2 oz Pine Nuts
- 1 can Light Cooking Spray

INSTRUCTIONS
- Coat chicken breast (sliced into strips) with salad dressing. The seasoning blend and onion powder should be sprinkled on the chicken strips. Allow for at least 30 minutes to marinate before cooking. (1 to 2 hours preferred)
- When the chicken has marinated for at least 30 minutes, sauté peppers and broccoli in a large, lightly-coated skillet until al dente. Add a little water to the pan as needed while cooking peppers to prevent them from scorching or burn. Set aside the sautéed peppers and broccoli.
- Add the chicken to a pan and cook until cooked through.
- Meanwhile, toast the pine nuts in a toaster oven or conventional oven until golden brown.
- Serve immediately with chicken, peppers, broccoli, and pine nuts, when chicken is done.
