LEAN & GREEN TOFU POWER BOWL
INGREDIENTS
- 15 oz Extra Firm Tofu
- 1 tsp Sesame Oil
- 1/2 cup Eggplant cubed
- 1/2 cup Cauliflower grated
- 1/2 cup Kale chopped
- 2 tbsp Low Sodium Soy Sauce
- 1 tsp Rice Vinegar

INSTRUCTIONS
- Place a layer of paper towels or a clean dishcloth (cheesecloth) on top of a plate or chopping board and press the tofu. Place the tofu strips on top of several layers of paper towels or another clean dishcloth (cheesecloth). On top, add another layer of paper towels or another clean dish towel. Place a weight on top of the second layer (this might be a heavy plate piled with canned goods or a stack of plates or hardcover books). Allow to sit for at least 15 minutes, then cut the tofu into 1-inch cubes.
- In a large skillet, heat sesame oil over medium-high heat. Place the eggplant cubes on the other half. Cook for approximately 10 to 12 minutes, or until slightly browned and soft. Remove the skillet from the heat, and set it aside. Add the kale, soy sauce, and rice vinegar to a large pan over medium-low heat; cook until wilted, about 3 to 5 minutes.
- Microwave the grated cauliflower in a small bowl with 1 teaspoon of water for 3 to 4 minutes, or until soft.
- In a mixing dish, combine cauliflower “rice,” tofu, eggplant, and kale.
