INGREDIENTS
- 2 cup Cauliflower grated
- 1/2 cup Egg Beaters
- 1/4 tsp Black Pepper
- 1/8 tsp Salt
- 3 oz Cooked Chicken Breast
- 1 oz Low Fat Mexican Cheese shredded
- 1 1/2 oz Avocado
- 2 tbsp Fresh Cilantro

INSTRUCTIONS
- Preheat the oven to 375°F. Cover a baking sheet with parchment paper.
- Cauliflower Tortilla Directions: Microwave cauliflower for 2 minutes, then combine and heat for another 2 minutes. Squeeze any excess water out.
- In a mixing bowl, combine the steamed cauliflower, eggs, pepper, and salt. Using a spoon or your hands, make 6 circles out of the mixture on a parchment-lined baking sheet. Bake for 10 minutes, turn over, and bake for another 5-7 minutes. Serve cool on a wire rack.
- Burrito Directions: Combine the chicken, cheese, avocado, and cilantro in a mixing bowl. Fill each cauliflower tortilla with 1/6 of the mixture.
- Sprinkle a pan or griddle with cooking spray. Pan-fry for 2 minutes, flip, and cook for 1 minute more, or until golden brown.
