LEAN & GREEN CHICKEN BURRITOS

INGREDIENTS

  • 2 cup Cauliflower grated
  • 1/2 cup Egg Beaters
  • 1/4 tsp Black Pepper
  • 1/8 tsp Salt
  • 3 oz Cooked Chicken Breast
  • 1 oz Low Fat Mexican Cheese shredded
  • 1 1/2 oz Avocado
  • 2 tbsp Fresh Cilantro

INSTRUCTIONS

  1. Preheat the oven to 375°F. Cover a baking sheet with parchment paper.
  2. Cauliflower Tortilla Directions: Microwave cauliflower for 2 minutes, then combine and heat for another 2 minutes. Squeeze any excess water out.
  3. In a mixing bowl, combine the steamed cauliflower, eggs, pepper, and salt. Using a spoon or your hands, make 6 circles out of the mixture on a parchment-lined baking sheet. Bake for 10 minutes, turn over and bake for another 5-7 minutes. Serve cool on a wire rack.
  4. Burrito Directions: Combine the chicken, cheese, avocado, and cilantro in a mixing bowl. Fill each cauliflower tortilla with 1/4 of the mixture.
  5. Sprinkle a pan or griddle with cooking spray. Pan-fry for 2 minutes, flip, and cook for 1 minute more, or until golden brown.
