LEAN & GREEN WHITE CHICKEN CHILI
INGREDIENTS
- 2 1/4 lbs Boneless Skinless Chicken Breast chopped
- 1 tbsp Olive Oil
- 1 cup Green Onions diced
- 1 cup Red Bell Peppers chopped
- 1/4 cup Jalepeno Pepper diced
- 3 small Garlic Cloves minced
- 1/2 tsp Salt
- 2 tsp Cumin
- 1 tsp Coriander
- 3 cup Chicken Broth
- 1 cup Water
- 2 (7) oz Mild Green Chilies
- 3 tbsp Unsweetened Coconut Milk
- 1 small Cilantro halved

INSTRUCTIONS
- Chop the chicken and veggies,(save some green onions to top each serving if you choose). In a large saucepan, heat the oil, onions, peppers (with the seeds), and Jalapeno (with the seeds) over medium-high heat for 5 minutes.
- Add the chicken, salt, and spices to a large stockpot. Sauté for an additional 5 to 8 minutes, or until the chicken is almost done. Add the broth, green chilies, and coconut milk. Bring to a boil over medium-low heat. Reduce the heat and simmer for 20 minutes.
- Serve with chopped green onions and parsley, if you desire.
I tried this meal tonight. It was delicious however it looked nothing like the picture. Mine looks like a soup. It’s more of a broth. I did add some chili, onion and cayenne powder. Not sure how to make sure I had the right amount of chicken or how that equates out to 11/2 cups of a vegetable but again it was delish. I am thinking maybe adding some riced cauliflower to it would help with the Veggie portion.
