  • 1.5 lbs Flank Steak
  • 2 small Garlic Cloves shredded
  • 1 tsp Dried Oregano
  • 1 tsp Cumin
  • 1 tsp Smoked Paprika
  • 1 small Bay Leaf
  • 1 (14.5oz.) can Diced Tomatoes
  • 1/4 tsp Salt (optional)*
  • 1/4 tsp Black Pepper
  • 1 small Green Bell Peppers sliced
  • 4 small Green Olives halved
  • 4 cup Frozen Riced Cauliflower



  1. Place all of the ingredients, except for the bell peppers, olives, and riced cauliflower, in an Instant Pot. Put the lid on and set it to “Meat” mode in an Instant Pot. Set the time for 30 minutes at high pressure. When the Instant Pot beeps, naturally release pressure immediately. Remove beef from pot and shred with 2 forks.
  2. Bring shredded beef, bell pepper, and olives back to the Instant Pot. Set up a steamer basket in the Instant Pot and fill it with cauliflower. Cook for 5 minutes in steam mode.
  3. Serve beef stew in a bowl over riced cauliflower.
  4. SLOW COOKER METHOD: In a slow cooker, combine all of the ingredients except for the bell pepper, olives, and cauliflower rice. Cover and cook on low for 6 hours or until beef is cooked through. Remove and shred beef with 2 forks. Add the shredded beef to the slow cooker. Stir in the bell pepper and olives. Cook for one hour on low. Steam cauliflower rice in the microwave on low heat with 2 tablespoons of water or in a steamer basket over boiling water on the stove. Serve shredded beef stew over steamed cauliflower rice for a hearty, low-carb meal.
