Lean & Green Middle Eastern Salmon with Tomato, Cucumber, & Dill Salad
Ingredients
- 4 cup Cucumber Sliced
- 2 cup Cherry Tomatoes Halved
- 1/4 cup Apple Cider Vinegar
- 1/4 tsp Salt (optional)*
- 1/4 tsp Black Pepper
- 1 1/2 lbs Boneless Skinless Salmon fillets
- 1 tbsp Za’tar
- 1 medium Lemons Quartered
Lean & Green Middle Eastern Salmon with Tomato, Cucumber, & Dill Salad
Instructions
- Preheat oven to 350*F.
- To make the salad, combine the first 5 ingredients in a large bowl and toss well.
- Season the salmon on both sides with Za”atar, and place on a foil-lined baking sheet. Roast until internal temperature reaches 145*F.
- Serve roasted salmon with salad and lemon wedges.
