Ingredients

  • 2 tsp Olive Oil
  • 21 oz Cooked Shrimp
  • 1 tbsp Creole seasoning Sliced
  • 6 oz Avocado
  • 1/2 cup Green Onions FInely Chopped
  • 2 tbsp Fresh Cilantro FInely Chopped
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Salt
  • 2 tsp Fresh Lemon juice
  • 2 cup Cucumber Sliced

Instructions

  1. Slice the cucumbers.
  2. Avocado sauce: Mix together 6 oz. smashed avocado, green onion, cilantro, pepper,salt, and lemon juice and set aside.
  3. Preheat a large heavy bottomed skillet on a medium-high heat, add the olive oil and creole seasoning. Add the shrimp and cook until slightly blackened, about 2-3 minutes on each side.
  4. Assemble the bites with the cucumber slices, top with the avocado sauce and shrimp.
