LEAN & GREEN ZUCCHINI PIZZA CASSEROLE

INGREDIENTS

  • 31/2 cup Zucchini shredded
  • 1/4 tsp Salt (optional)*
  • 2 large Eggs
  • 1/4 cup Parmesan Cheese grated
  • 4 oz Reduced-Fat Mozzarella Cheese shredded
  • 4 oz Reduced-Fat Cheddar Cheese shredded
  • 1 can Light Cooking Spray
  • 1/2 lbs Lean Ground Beef
  • 1 (14.5) oz Italian Tomatoes diced
  • 1 small Green Bell Peppers chopped

LEAN & GREEN ZUCCHINI PIZZA CASSEROLE

INSTRUCTIONS

  1. Preheat the oven to 400* F.
  2. Place zucchini (shredded, unpeeled zucchini, about 2 medium zucchini) in a strainer, and sprinkle with salt(optional). Allow to stand for 10 minutes before pressing it out, and then press to release moisture.
  3. Combine the zucchini, eggs, parmesan, and (half) of the mozzarella and cheddar cheese in a mixing container.
  4. Mix all the ingredients together in a mixing bowl. Press the mixture into a lightly greased baking dish and bake for 20 minutes, uncovered.
  5. Meanwhile, cook the beef and onion in a small saucepan over medium heat until done. Stir in (petite diced) tomatoes with any liquid removed.
  6. Pour the beef mixture over the zucchini and sprinkle with the remaining cheddar and mozzarella cheese. Top with green peppers.
  7. Bake for an additional 20 minutes or until heated through.
