- 11/4 lbs Skinless ChickenThigh
- 4 cup Chicken Stock
- 1 tsp Salt (optional)*
- 1 cup Celery sliced
- 2 cup Green Cabbage shredded
- 1 cup Yellow Squash diced
- 1 cup Cauliflower Florets
- 1 cup Cherry Tomatoes halved
- 1 cup Fresh Basil
- 1/4 tsp Black Pepper
- 4 tsp Low-fat Parmesan Cheese

INSTRUCTIONS
- Combine the chicken and stock in a large pot, and bring to a boil. Once it starts boiling, lower the heat and also simmer gently for about 45 minutes until the chicken is cooked. Remember: Separate the chicken thighs from the broth and keep them aside to cool.
