Lean & Green Broccoli Cheddar Soup

Ingredients

  • 6 cup Broccoli Chopped
  • 12 oz Plain Low-fat Greek Yogurt
  • 1 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 4 cup Low Sodium Chicken Broth
  • 3 cup Reduced Fat Cheddar Cheese Shredded
  • 2 tsp Toasted Sunflower Seeds
  • 2 cup Water

Instructions

  1. Bring the water and chicken stock to a boil in a saucepan. 2 cups of chopped broccoli should be added, and it should be cooked for approximately a minute on high until soft. Broccoli should be taken out of the cooking liquid using a slotted spoon and placed aside.
  2. Salt and the remaining 4 cups of broccoli should be added to the simmering liquid. Broccoli should be tender after 6 to 8 minutes of gentle simmering covered at a boil.
  3. Blend the broccoli with the cooking liquid many times to get the required smoothness.
  4. Add the black pepper and nutmeg to the saucepan with the pureed broccoli. Bring to a simmering boil.
  5. Yogurt and cheese are added, and the mixture is heated through while stirring continuously (note: avoid boiling the soup to prevent the yogurt from curdling).
  6. 4 equal servings of the soup (approximately 2¼ cups each) should be made. Each dish should include a half cup of broccoli florets and be topped with a teaspoon of sunflower seeds.
