Lean & Green Grill Mates Swai Fish with Eggplant and Zucchini
INGREDIENTS
- 7 oz Swai Fish Recipes
- 1 tsp McCormick Grill Mates Fiery 5 Pepper Seasoning
- 1 medium Zucchini sliced
- 2 slice Eggplant
- 1/2 tsp Black Pepper (optional)*
- 1 can Cooking spray

INSTRUCTIONS
- Preheat outdoor grill to a high heat.
- Spray the spray can with cooking spray. On each side, sprinkle 1 tsp. (1/2) of McCormick Grill Mates Fiery 5 Pepper Seasoning. Place the swai fish in a piece of tin foil large enough to wrap around the fillet. Completely wrap the swai fish in long sides of foil. To create a seal and prevent the fold from opening, fold the foil edges together.
- Place the zucchini and eggplant slices in a grill basket. Season with black pepper, if desired (optional).
- Place the swai fish and vegetables in the grill basket on your gas or charcoal grill. After 15 minutes, check the swai fish for doneness; it will be light and flaky when pressed, yet moderately resilient to the touch. After the 15 minutes, flip the veggies in the grill basket. Continue to cook the vegetables and salmon for a total of 10 minutes, or until they are done.
