This simple single-serve casserole is a family favorite, and you may add chicken or shrimp to get a complete lean and green meal with this Spaghetti Squash Kugel recipe.
OPTION: Squash may be baked, steamed, or microwaved. To bake the squash in the oven, preheat the oven to 350°F. Squash should be washed and placed in a loaf pan. Bake for one hour. Remove the squash from the oven and let it cool before cutting it in half and removing the seeds.

LEAN & GREEN SPAGHETTI SQUASH KUGEL
INGREDIENTS
- 1 1/2 cup Cooked Spaghetti Squash shredded
- 1 can Cooking spray
- 1 tbsp Onion finely diced
- 1/2 slice Garlic Cloves minced
- 3 large Egg Whites beaten
- 1/8 tsp Salt
- 1/4 tsp Black Pepper

INSTRUCTIONS
- Preheat oven to 400*F.
- Prepare squash by microwaving for 1 minute to soften. Remove the seeds from each half and cut them into halves. Place one of the halves, cut-side down, in a dish with 1/2 inch water. Microwave for 8 to 10 minutes on high. Allow it to cool.
- In a skillet, heat 5 sprays of cooking spray. Add the onions and garlic and sauté for 5-7 minutes, or until the onions are soft.
- Squash strands should be scraped out with a fork and placed in a large mixing bowl. The onion should be added to the squash mixture and thoroughly mixed in. Add the egg whites, salt, and pepper to the mix and stir well. Pour the pudding into a greased 9 x 13-inch baking dish and bake for about 1 hour or until golden.
