LEAN & GREEN CHEESY BACON SMOTHERED CHICKEN

INGREDIENTS

  • 10 oz Cooked Chicken Breast sliced
  • 3 tsp Olive Oil
  • 6 slice Canadian Bacon chopped
  • 4 slice Low Fat Mozzarella Cheese
  • 1 cup Unsweetened Vanilla Almond Milk
  • 1/4 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Chicken Broth
  • 1 tsp Garlic Powder
  • 1 tsp Fresh Parsley
  • 5 tbsp Reduced Fat Parmesan Cheese grated
  • 1 cup Fresh Spinach chopped
  • 1 slice Sun Dried Tomatoes chopped

Lean & Green Cheesy Bacon Smothered Chicken

Recipe Instructions:

  • Begin by cooking the Canadian bacon in a large skillet. Once cooked, remove the bacon from the skillet and drain off the excess fat. Chop the bacon into small pieces and set them aside for later use. Keep the skillet as you’ll be using it again.
  • In the same skillet, add olive oil and heat it up. Lay the thinly sliced chicken in the skillet and cook over medium to high heat for about 4 minutes on each side. Ensure both sides are nicely browned and there is no pink remaining in the chicken pieces.
  • Now, in the same skillet, add almond milk, chicken broth, garlic powder, parsley, salt, pepper, and parmesan cheese. Whisk the ingredients together over medium to high heat until the mixture begins to thicken.
  • Introduce spinach and sun-dried tomatoes into the skillet. Allow the ingredients to simmer until the spinach starts to wilt. Then, reduce the heat to low.
  • Take each chicken piece and coat it lightly with the sauce in the pan, adding them one by one. Place a sliced mozzarella cheese over each chicken piece, and sprinkle the chopped bacon on top.
  • Cover the skillet and let it sit for approximately 1 minute to allow the cheese to melt completely.

  1. I don’t understand why you would create a recipe that isn’t a full meal.

    For example, the Lean & Green Cheesy Bacon-smothered Chicken gives us the Optavia counts: 1 Lean, ⅓ Green, 1 Healthy Fat, 3 Condiment (and it contains a picture that is obviously not your recipe).

    Why is this 1/3 green? Why don’t you just add more spinach to the recipe and make it a complete meal? My brain already hurts from trying to do the math of dividing this by 1/3 (I only have myself to cook for).
