LEAN & GREEN BUFFALO CHICKEN CAULIFLOWER CRUST PIZZA
INGREDIENTS
- 5 cup Frozen Riced Cauliflower
- 3 large Eggs
- 3/4 tsp Salt
- 3/4 lbs Rotisserie Chicken Breast shredded
- 2 tbsp Hot Sauce
- 4 stalk Scallions finely chopped
- 3 tbsp Reduced-Fat Blue Cheese cubed
- 1 tsp Garlic Powder
- 1 cup Reduced-Fat Mexican Cheese Blend shredded

INSTRUCTIONS
- Preheat the oven to 425°F.
- Spread the cauliflower on a baking sheet covered with parchment paper and bake for 30 minutes, or until golden brown. Remove from the oven and set aside to cool.
- Squeeze the cauliflower in a kitchen towel to remove all of the moisture. Combine the cauliflower, eggs, and salt in a mixing dish.
- Place the cauliflower mix on a parchment-lined sheet pan and press into a 12-inch circle. Bake for 8 minutes at 400°F.
- While the crust is baking, prepare the toppings. In a mixing dish, combine all of the ingredients other than mozzarella cheese.
- Remove the sheet pan from the oven, but leave it on to keep the topping warm. Spread each topping equally over the prepared surface. Remove from the oven and top with the specified amount of mozzarella cheese. Then bake at 400°F for about 10 to 12 minutes, or until golden brown, adding any other desired toppings.
- Cut the pizza into 8 equal pieces (2 slices each serving).
