LEAN & GREEN CHICKEN PARMESAN

INGREDIENTS

  • 1.75 lbs Boneless Skinless Chicken Breast
  • 1/2 cup Almond Flour
  • 2 tbsp Large Flake Nutritional Yeast
  • 2 tsp Large Flake Nutritional Yeast
  • 1/2 tsp salt divided (optional)*
  • 1/2 tsp Black Pepper
  • 1 (15oz.) can Petite Diced Tomatoes
  • 1/2 tsp Dried Oregano
  • 2 small Garlic Cloves minced
  • 2 stalk Scallions chopped
  • 2 medium Zucchini spiraled

INSTRUCTIONS

  1. Preheat oven to 400*F.
  2. In a medium-sized bowl, combine the almond flour and (2tbsp+2tsp) of large flake nutritional yeast. Season the chicken breasts with salt (if desired) and pepper, then cover both sides in almond mixture.
  3. Bake the chicken for 12 to 15 minutes, or until its internal temperature reaches 165°F. Remove the chicken from the oven after it has cooked. Set aside to rest while still hot.
  4. While the chicken is baking, put the tomatoes, oregano, garlic, and scallions in a saucepan and simmer for 15 to 20 minutes on low.
  5. Zucchinis (1 lb. total), sliced or “spiralized” into noodle-like strands (should yield about 4 cups zucchini noodles). Steam zucchini “noodles” in a steamer basket over boiling water on the stovetop until cooked.
  6. Serve chicken with zucchini “noodles” and marinara.
