Lean & Green Cauliflower Rice Stuffing

  • 1 tbsp Unsalted Butter
  • 1 cup Celery diced
  • 1 cup Baby Bella Mushrooms diced
  • 1/3 cup Yellow Onion diced
  • 2 oz Walnuts chopped
  • 4 cup Chicken Stock
  • 1 tbsp Fresh Sage chopped
  • 1 tbsp Fresh Rosemary chopped
  • 1/2 tbsp Poultry Seasoning
  • 1/2 tsp Salt (optional)*



  1. In a large saucepan, melt the butter. Add the celery, mushrooms, and onion and cook for about 5 minutes, or until softened.
  2. Add the cauliflower rice and saute for another 2 minutes, or until soft.
  3. Add the stock and seasoning; mix thoroughly. Cover and cook it until liquid is absorbed 12 to 15 minutes.

  1. I think the amount of chicken stock is a misprint. All the other recipes I have found and video I have seen says 1/2 c. stock, not 4 cups. 4 cups is way too much and makes it watery.
