LEAN & GREEN CAULIFLOWER RICE STUFFING
INGREDIENTS
- 1 tbsp Unsalted Butter
- 1 cup Celery diced
- 1 cup Baby Bella Mushrooms diced
- 1/3 cup Yellow Onion diced
- 2 oz Walnuts chopped
- 4 cup Chicken Stock
- 1 tbsp Fresh Sage chopped
- 1 tbsp Fresh Rosemary chopped
- 1/2 tbsp Poultry Seasoning
- 1/2 tsp Salt (optional)*

INSTRUCTIONS
- In a large saucepan, melt the butter. Add the celery, mushrooms, and onion and cook for about 5 minutes, or until softened.
- Add the cauliflower rice and saute for another 2 minutes, or until soft.
- Add the stock and seasoning; mix thoroughly. Cover and cook it until liquid is absorbed 12 to 15 minutes.

I think the amount of chicken stock is a misprint. All the other recipes I have found and video I have seen says 1/2 c. stock, not 4 cups. 4 cups is way too much and makes it watery.
