Lettuce Burger & Sweet Potato Fries

Ingredients
- 1 medium sweet potato
- 2 tsp olive oil
- ½ tsp each: salt & ground black pepper, divided
- ½ lb. lean ground beef, chicken, or turkey
- Cooking spray
- 4 large lettuce leaves, like red or green leaf, butter, or romaine
- 4 slices each: tomato & red onion
- 1 ½ cups strawberries

Directions
- Preheat oven to 425º F and line a baking sheet with parchment paper.
- Cut sweet potato into fry-shaped pieces about ¼ inch to ½ inch thick, trying to cut them into similarly sized pieces so they bake evenly.
- Toss potato pieces with olive oil, ¼ teaspoon of salt, and ¼ teaspoon of pepper and place on baking sheet, making sure the potato pieces are not overcrowded to allow them to get crisp.
- Bake for 15 minutes, flipping half way through, or until the fries are tender and slightly browned.
- While the fries bake, season the ground meat with ¼ teaspoon of both salt and pepper, using your hands to gently mix the seasoning throughout the ground meat.
- Divide the meat in half and form into evenly shaped burger patties, about a ½ inch to 1 inch thick.
- Heat a nonstick skillet over medium-high heat and lightly grease with cooking spray.
- Add patties to skillet, cover, and cook for about 4 to 5 minutes per side.
- Place each burger on two lettuce leaves and top with two slices of both tomato and onion; repeat with remaining burger.
- Serve burgers with sweet potato fries, seasonal fruit (such as strawberries).
Tip
Add more flavor to the sweet potato fries by seasoning with a pinch of cinnamon and nutmeg.
