INGREDIENTS
- 1 lbs Shrimp
- 1/2 tbsp Cajun Seasoning
- Spray small Light Cooking Spray
- 1 tbsp Lemon Juice
- 1/4 cup Low Sodium Chicken Broth
- 1 tbsp Unsalted Butter
- 21/2 cup Frozen Riced Cauliflower
- 1/2 cup Unsweetened Almond Milk
- 1/4 tsp Salt (optional)*
- 2 tbsp Light Sour Cream
- 1/3 cup Reduced-Fat Cheddar Cheese shredded
- 1/4 cup Scallions sliced

INSTRUCTIONS
- In a large resealable plastic bag, combine the shrimp and Cajun seasoning. Toss to coat the shrimp evenly with the seasoning after closing the plastic bag.
- Spray a medium-sized skillet with cooking spray and cook the shrimp over medium heat for 2 to 3 minutes on each side, or until pink. Add lemon juice and chicken broth to the pan. Scrape off any bits on the bottom of the pan, and then let it cook for 1 minute.
- In a second skillet, melt the butter. Add the riced cauliflower and simmer for 5 minutes. Add the milk and salt, then cook for another 5 minutes.
- Remove the pan from the heat and stir in sour cream and cheese until melted.
- Serve shrimp atop cauliflower grits, and top with scallions.
