Lean & Green Pan-Seared Scallops and Zucchini Noodles with Roasted Red Pepper Sauce
Ingredients
- 1(6oz.) jar oz Roasted Red Peppers
- 1/2 cup Unsweetened Almond Milk
- 2 oz Avocado
- 2 tsp Lemon Juice
- 1 small Garlic Cloves
- 1/4 + 1/8 tsp Salt
- 2 small Zucchini
- 1/2 tbsp Unsalted Butter
- 1 lbs Scallops

Instructions
- In a blender, mix together drained roasted red pepper, milk, avocado, lemon juice, garlic, crushed red pepper, and 1/4 tsp. of salt (if desired). Blend until smooth.
- Heat the blended red pepper sauce in a skillet over medium heat, stirring occasionally, until it is heated through, about 3 to 5 minutes.
- Add the zucchini noodles (which have been cut into spaghetti-like strands using a spiralizer, mandolin, or julienne peeler) to the skillet and stir to incorporate. Cook for an additional 3 to 5 minutes or until cooked to your liking.
- In a separate skillet, melt butter over medium-high heat. Season the scallops with remaining salt (if desired) and cook until they are golden brown on each side and translucent in the center, about 1 to 2 minutes per side.
- Serve the scallops on top of the zucchini noodles and enjoy!
