Garlic Shrimp With Zucchini Noodles | Lean and Green Recipes

  • 9 oz Raw Shrimp
  • 2 tsp Olive Oil divided
  • 1/2 tbsp Light Butter
  • 1 tsp Garlic minced
  • 1.25 tsp Fresh Lemon juice
  • 1/2 tsp Fresh Parsley chopped
  • 1/8 tsp Crushed Red Pepper Flakes
  • 1/2 cup Grape Tomatoes halved
  • 1 cup Zucchini Noodles
  • 1 tbsp Parmesan Cheese



  1. In a large skillet, heat 1 teaspoon olive oil and sauté the shrimp for 4-5 minutes on medium-high.
  2. Add the butter, garlic, lemon juice, red pepper flakes, parsley, and tomatoes to the pan with the shrimp once it has turned pink.
  3. In a separate skillet, heat 1 tsp. of olive oil on medium-high heat, then add the zucchini noodles and saute for 1-2 minutes until they are lightly browned. Do not overcook the zucchini noodles; they should be added at the last minute.
  4. Place the zucchini noodles in a serving dish, then top with the shrimp mixture and 1 Tbsp. fresh Parmesan cheese.
