LEAN & GREEN GARLIC SHRIMP WITH ZUCCHINI NOODLES
INGREDIENTS
- 9 oz Raw Shrimp
- 2 tsp Olive Oil divided
- 1/2 tbsp Light Butter
- 1 tsp Garlic minced
- 1.25 tsp Fresh Lemon juice
- 1/2 tsp Fresh Parsley chopped
- 1/8 tsp Crushed Red Pepper Flakes
- 1/2 cup Grape Tomatoes halved
- 1 cup Zucchini Noodles
- 1 tbsp Parmesan Cheese
LEAN & GREEN GARLIC SHRIMP WITH ZUCCHINI NOODLES
INSTRUCTIONS
- In a large skillet, heat 1 teaspoon olive oil and sauté the shrimp for 4-5 minutes on medium-high.
- Add the butter, garlic, lemon juice, red pepper flakes, parsley, and tomatoes to the pan with the shrimp once it has turned pink.
- In a separate skillet, heat 1 tsp. of olive oil on medium-high heat, then add the zucchini noodles and saute for 1-2 minutes until they are lightly browned. Do not overcook the zucchini noodles; they should be added at the last minute.
- Place the zucchini noodles in a serving dish, then top with the shrimp mixture and 1 Tbsp. fresh Parmesan cheese.
