LEAN & GREEN CALIFORNIA CLUB TACOS
INSTRUCTIONS
- Make the provolone cheese taco shells: On a paper plate, place one slice of provolone cheese and grease it with cooking spray or a microwave-safe Taco rack holder. Microwave on high for 60 seconds.
- Remove immediately from the microwave and, if necessary, reshape the cheese into a circle. Allow 5 seconds for the cheese to cool before forming it into a taco shell shape on the edge of a dish or microwave-safe taco rack. Let sit until it cools down. Repeat with the remaining 2 slices of cheese.
- To mix the ingredients, toss together the chicken, avocado, bacon, tomatoes, ranch, and lettuce.
- Fill the cooled tacos with the lettuce mixture. Any extra can be served as a side salad.
