LEAN & GREEN BROCCOLI CHEDDAR BREAKFAST BAKE

Ingredients

  • 6 cup Small Broccoli florets
  • 9 large Eggs
  • 1 cup Unsweetened Almond Milk
  • 1/4 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper (optional)*
  • 1 can Light Cooking Spray
  • 4 oz Reduced-Fat Cheddar Cheese shredded

Instructions

  1. Turn on the oven to 375 degrees Fahrenheit.
  2. Put broccoli in a microwave-safe dish. Add 2 or 3 Tbsp. water. Microwave for 3-4 minutes or until it is soft. Put the broccoli in a colander to put out any extra liquid leftover.
  3. While you are whisking the eggs, milk, and seasonings together in a bowl, mix them up with a spoon.
  4. Arrange the broccoli on the bottom of a lightly greased 13 x 9 baking dish. Sprinkle cheese on the broccoli and pour the egg mixture over top.
  5. Bake the cake for 40 to 45 minutes. Take it out when the inside is set and the top is brown.
