LEAN & GREEN BROCCOLI CHEDDAR BREAKFAST BAKE
Ingredients
- 6 cup Small Broccoli florets
- 9 large Eggs
- 1 cup Unsweetened Almond Milk
- 1/4 tsp Black Pepper
- 1/4 tsp Cayenne Pepper (optional)*
- 1 can Light Cooking Spray
- 4 oz Reduced-Fat Cheddar Cheese shredded

Instructions
- Turn on the oven to 375 degrees Fahrenheit.
- Put broccoli in a microwave-safe dish. Add 2 or 3 Tbsp. water. Microwave for 3-4 minutes or until it is soft. Put the broccoli in a colander to put out any extra liquid leftover.
- While you are whisking the eggs, milk, and seasonings together in a bowl, mix them up with a spoon.
- Arrange the broccoli on the bottom of a lightly greased 13 x 9 baking dish. Sprinkle cheese on the broccoli and pour the egg mixture over top.
- Bake the cake for 40 to 45 minutes. Take it out when the inside is set and the top is brown.
