Lean & Green Mexican Bell Pepper Casserole

Ingredients

  • 3 large Eggs
  • 12 oz Plain Non-Fat Greek Yogurt
  • 1/2 cup Onion Sliced
  • 1 small Garlic Cloves Minced
  • 1 tsp Olive Oil
  • 1/4 tsp Salt
  • 1 tsp Cumin
  • 1/2 tsp Dry Mustard
  • 1/2 tsp Coriander
  • 2 medium Green Bell Peppers Chopped
  • 8 oz Reduced-Fat Cheddar Cheese Shredded
  • 1/4 tsp Cayenne Pepper

Lean & Green Mexican Bell Pepper Casserole

Instructions

  1. Preheat oven to 375 degree F
  2. Beat together the eggs and yogurt, set aside
  3. In a medium skillet, cook onions and garlic in oil with spices until onions are translucent. Add peppers, and continue to cook over low heat, 4 to 5 minutes if using frozen and 8 to 10 if using fresh
  4. Spread half the pepper mixture in a deep casserole dish and top with half the cheese; repeat the layers. Pour yogurt mixture over top.
  5. Cover and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
