Ingredients
- 1 lb. pork tenderloin sliced into ¾-inch thick medallions
- 2 tsp olive oil, divided
- 1 ½ cups button or cremini mushrooms, sliced
- 4 tbsp blue cheese
- 2 cups watercress
- ½ cup jicama, cut into matchsticks or shredded
- 2 tsp balsamic vinegar

Directions
- Heat one teaspoon of olive oil in a large non-stick frying pan over high heat. Add the pork medallions and sauté for 2 to 3 minutes or until browned.
- Flip the medallions then add the sliced mushrooms. Continue to sauté pork and mushrooms for another 3 to 4 minutes until pork and mushrooms are cooked through.
- Crumble the blue cheese into the pan to melt. Swirl the medallions and mushrooms with the blue cheese. Toss to coat.
- Toss the watercress with the jicama, the remaining teaspoon of olive oil and balsamic vinegar.
- To serve, place the salad on the plate and top with the melty blue cheese pork and mushrooms.
