LEAN & GREEN CAULIFLOWER PIZZA WITH CHICKEN & TZATZIKI

INGREDIENTS

  • 5 1/2 cup Frozen Riced Cauliflower
  • 2 large Eggs
  • 1 tbsp Low-fat Parmesan Cheese
  • 1/4 tsp salt divided (optional)*
  • 1 lbs Boneless Skinless Chicken Breast sliced
  • 10 large Kalamata Olives
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Black Pepper
  • 1 cup reduced-fat shredded mozzarella cheese shredded
  • 1/2 cup Cucumber grated
  • 1/2 Cup Plain Non-Fat Greek Yogurt
  • 1/2 tsp Garlic Cloves crushed

INSTRUCTIONS

  1. Preheat the oven to 450°F.
  2. Spread the cauliflower “rice’ on a baking sheet lined with parchment paper and bake until golden brown. Remove the casserole from the oven and set it on a wire rack to cool. Squeeze the cauliflower in a cheesecloth or kitchen towel to remove any extra moisture, if necessary.
  3. In a mixing dish, combine the cauliflower with the eggs, parmesan cheese, and 1/4 teaspoon of salt; mix well to combine.
  4. Place the cauliflower on a parchment-lined baking sheet and press it into a 12-inch pizza shape.
  5. In a mixing cup, combine the chicken strips, olives, Italian seasoning, and black pepper. Toss everything together in a medium bowl.
  6. On top of the cauliflower crust, arrange chicken strips (cut into tiny pieces) and olives, then sprinkle with mozzarella cheese. Bake at 425*F for approximately 20 minutes until golden brown.
  7. While the cauliflower pizza crust is baking, prepare the tzatziki sauce. Grate the cucumbers, add 1/4 teaspoon salt (optional), and 2 tablespoons plain yogurt to a mixing bowl with 1 head of garlic and finely chopped.
  8. Cut the cauliflower into 4 wedges and top each with a spoonful of tzatziki.
