Tip: You may also cook spaghetti squash. Preheat the oven to 400° F. Remove the seeds from the squash after cutting it in half. Prepare the squash as directed, but instead of baking it whole, bake it flat on a lightly greased baking sheet for 30 minutes or until soft. INGREDIENTS

  • 1 small Spaghetti Squash
  • 21/2 tbsp Olive Oil
  • 1 small Garlic Cloves minced
  • 13/4 lbs Cooked Shrimp
  • 1 cup Cherry Tomatoes halved
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1 tsp Lemon Juice
  • 1 tbsp Dried Parsley
  • 1/2 tsp Onion Powder
  • 1/4 tsp Black Pepper
  • 1/4 cup Parmesan Cheese shredded (optional)*

INSTRUCTIONS

  1. When the squash is cool enough to handle, cut it in half and remove the seeds. Place both halves in a microwave-safe container with 1 inch of water. Microwave 10 to 12 minutes until soft. ( Depending on the size of the squash and power of microwave). Allow time for the squash to cool before handling. Scrape out the flesh into spaghetti-like strands using a fork. Add 5 cups, then save any extra for another dish.
  2. Over a medium-high burner, heat a large skillet. Swirl in the olive oil to coat the pan and cook the garlic for about 1 minute.
  3. After adding the shrimp (cooked, peeled, deveined), cherry tomatoes, red pepper flakes, lemon juice parsley, and onion powder in a small saucepan over low heat. Season with salt (optional) for3 to 4 minutes. Add the spaghetti squash and cook until it’s soft. Remove from heat, and top with parmesan cheese (if desired).

  1. What a fabulous and very flavourful recipe. I warn you though once you taste the shrimp for doneness put the fork or spoon down as you’ll want to go back for more. Next time I may buy 2lbs shrimp it’s that good.
